Here's a recipe for pumpkin bread that my neighbor just gave us. It's really yummy (kind of a mix between banana bread and carrot cake), and it's a good disposal method for the halloween pumpkins, if you have any that haven't been cut into yet. ANTHONY'S PUMPKIN BREAD Wet Ingredients 1 cup oil 3 eggs 2 cups of cooked or canned pumpkin (see below for cooked pumpkin instructions, if you want to do it from scratch) Dry Ingredients 3 1/2 cups flour 2 cups sugar 1 cup chopped walnuts 1 tsp allspice 1 tsp nutmeg 1 tsp cinnamon 1 tsp salt 1/2 tsp baking soda 1/2 tsp baking powder Cooking Instructions 1. Throw the wet ingredients in a bowl and mix with an electric mixer. 2. Dump the dry ingredients on top and mix again. 3. Spray and flour 3 small loaf pans and fill each one half-way. 4. Bake until done (just kidding -- don't you hate when people do that? Bake at 350°F for about 1 hour and 10 minutes). ** How to Make Cooked Pumpkin ** > From the Joy of Cooking ©®T Cookbook: Wash and cut pumpkin in half crosswise. Remove seed and strings. Place in a pan, shell side up, and bake it at 325°F for 1 hour or more, until it's tender and begins to fall apart. Scrape the pulp from the shell and put it through a ricer (whatever the heck that is), or a strainer, or a blender.
